| MILLBORO SPRINGS - Great food was everywhere at the grand opening of Elliott's Catering a week ago Saturday night. Every passerby noticed the buffet table in the dining room covered with tasty hors d'oeuvres.
A large turnout joined Josh Elliott for the opening of his catering service. Located just off Route 39 in Millboro Springs, Elliott has big plans for his new endeavor.
"It is going to be a catering business, primarily catering to the community but also a few nights here will also be open for dinner. We will also rent out the space for receptions," he said.
Customers can rent the space for cocktail parties, weddings, dinners, and other events, too. And Elliott will hold cooking classes at the Millboro location.
Elliott has lived and cooked around the country for several years. He lived in California before moving to Utah. From Utah, Elliott moved to Bath County and found work at The Homestead pastry shop and its main kitchen.
After his stint with The Homestead, Elliott went to work with "Chef Ed" McArdle at The Muse restaurant at Three Hills Inn.
Elliott moved back to Colorado in 1996 and found work at a ski lodge. He soon returned to Bath and pursued work at The Homestead once more. His second tour at the resort didn't last long and he moved back to the West Coast and served resorts in California.
Missing the sweet mountain air of Bath County, Elliott again moved back to the area for the third time. He opened his restaurant, "Elliot's," and operated on Main Street in Hot Springs for roughly five years.
Elliott is writing a new chapter in Bath County these days. After closing his restaurant, he hopes his new catering service will be a hit.
When asked why he kept returning to Bath, Elliott had a simple explanation. "Bath is beautiful," he said.
Elliott's target market in the community is "anybody who likes to eat great food," he says. From the comments of those attending the opening last weekend, it seems Elliott's Catering, like his previous ventures, is likely to be a hit.
Elliott's business aims to take away the stress of picking up catered meals. He and his staff will bring food right to customers.
In addition to catering and parties, Elliott is introducing other innovative ideas to make set his service apart in the area, primarily by offering in-home dinners.

He is also willing to host cooking classes in clients' homes.
"I am very thankful that I can do this and provide this for the community. It's fun and I really enjoy it," Elliott said.
