Dotty's English Muffin Bread

5 cups flour (all purpose) 1 Tablespoon sugar 2 teaspoons salt teaspoon baking soda
2 pkgs quick or rapid-rise yeast

2 cups milk
cup water
Cornmeal
Set aside 1 cup flour. Combine remaining flour, sugar, salt, soda and yeast. Heat milk and water until very warm, about 130 degrees Add to dry mixture; beat well.

Stir in reserved flour as needed to make a stiff dough.

Spoon into two loaf pans that have been greased and dusted with cornmeal. Sprinkle top w/ cornmeal

Cover. Let rise about 30 minutes. Set oven to 400 degrees. Bake for 25 minutes. Remove from pans immediately and cool.

Dotty McCollum made this bread often, and well. It is good with anything, plain or toasted.
